Quick and elegant endive boats: your new apéritif secret
Introducing the perfect apéritif
Looking for a quick, fresh, and elegant apéritif? These endive boats filled with creamy cheese and ham are your new best friend. Crunchy, creamy, and perfectly light, they're the ideal solution when time is short but you want to impress.
Ingredients for 4 people (approximately 20-24 boats)
- 3 beautiful endives (± 400 g)
- 180 g of fresh cream cheese
- 60 g of thick Greek yogurt or plain yogurt
- 90 g of ham, without rind
- 1 teaspoon of mustard (sweet or strong, to taste)
- 1 tablespoon of chopped chives (fresh or frozen)
- 1 tablespoon of olive oil
- 2-3 tablespoons of fresh lemon juice
- Salt, to taste
- Black pepper, to taste
- Optional: 20 g of cornichons, finely chopped, or a pinch of smoked paprika or curry powder
Preparation in less than 15 minutes
Rinse the endives quickly under cold water. Gently dry them with a clean towel or paper towel. Remove any damaged leaves. Separate the leaves one by one. Choose the largest and sturdiest ones. Arrange them on a plate, hollow side up. They'll form your little boats immediately.
In a medium bowl, mix 180 g of cream cheese and 60 g of Greek yogurt. Add 1 teaspoon of mustard, 1 tablespoon of olive oil, and 2-3 tablespoons of lemon juice. Mix vigorously until smooth. Cut 90 g of ham into very small pieces. Add them to the cream mixture. Stir in 1 tablespoon of chopped chives. Season generously with black pepper. Be cautious with the salt, as the ham already contains some. Test the texture. The cream should hold on the spoon without dripping. If it's too liquid, add 1-2 tablespoons of cream cheese. If it's too thick, loosen with 1 tablespoon of Greek yogurt or a bit of lemon juice.
Using a small spoon, fill each leaf with about 1 tablespoon of the mixture. Aim for a thickness of about 1 cm and leave the tip of the leaf free for easy handling. Place the plate in the refrigerator for 10-15 minutes. The short chill firms up the filling and keeps the endives crunchy.
Just before serving, add a final touch of black pepper and a few chive sprigs.
Variations to keep it interesting
Spicy Version: Add 20 g of cornichons, finely chopped, or 1 teaspoon of capers, rinsed. The contrast between the crunch of the endive and the tangy flavor is delightful.
Chicken or Rich Version: Replace 45 g of ham with 45 g of cooked chicken, finely chopped, for a milder version. For an even richer filling, use 200 g of cream cheese and reduce the Greek yogurt to 40 g.
Practical tips and tricks
You can prepare these endive boats up to 1 hour in advance. Store them in the refrigerator, covered with plastic wrap to prevent the leaves from drying out. If the mixture releases some liquid, mix quickly before filling. Otherwise, use the filling as a topping on toasts to avoid waste.
For a more festive presentation, vary the colors. Add a bit of smoked paprika to some boats. Sprinkle with nuts for extra texture. Serve chilled. Guests will appreciate the immediate crunch followed by the creaminess of the cheese. It's a light apéritif that looks like a well-thought-out effort without any hassle. Keep this quick and easy recipe on hand. It's a lifesaver on busy weeknights and a hit at parties. Simple, fast, and delicious, it deserves a regular spot in your apéritif repertoire.
